The story
When you walk down the dark alley running alongside Mount Vernon's Hotel Ulysses, look for the faint lantern light marking an unpretentious door. You didn't hear it from us, but stepping inside plunges you into near-pitch blackness until your eyes adjust to candles flickering against amber stained glass and a black walnut bar. Created by Lane Harlan and her musician husband Matthew Pierce—the team behind W.C. Harlan and Clavel—the space draws its mood from 1980s Manila club culture, accompanied by a sound system that might greet you with a sweeping recording of 'Ave Maria.'
The bar's name comes from a musical track Pierce composed after a Caribbean snorkeling trip with Harlan, where a school of squid paused in front of her as her hair floated in the water like reef growth. That same eccentric precision governs the menu, which trades cliché tiki formulas for rum and agave drinks like the Banana Hammock—Cimarron tequila blanco with banana, lime, a Himalayan salt rim, and a pinch of MSG—and a Painkiller laced with Sichuan peppercorns.

Expect a short wait in the alley if you arrive on a weekend night, as the candlelit interior holds only a handful of seats. Once inside, you will almost certainly need your phone flashlight to decode the drink menu in the dark. Head over early on a weeknight to grab a stool at the walnut bar, talk through the rum selections with the bartender, and enjoy the dim atmosphere without navigating a crowd.
