New Orleans School of Cooking
Set inside a renovated 1830s molasses warehouse in the French Quarter, this school runs a three-hour hands-on class where couples actually cook rather than just watch. Working a shared cooktop with an expert chef, you prepare a full Louisiana dinner that can include gumbo, jambalaya, etouffee, and a dessert like bananas Foster or bread pudding. The chefs season the lessons with local history, trivia, and tall tales, then everyone sits down to eat what they made. You leave with recipe cards and an apron.
The story
Inside an 1830s renovated molasses warehouse in the French Quarter, the New Orleans School of Cooking bypasses the standard passive demonstration format. Instead of sitting behind a glass barrier while someone else chops onions, you are posted directly at a shared cooktop, knife in hand, under the watch of an expert chef who weaves local history, trivia, and tall tales into every step of the prep work.
The hands-on lessons target the core pillars of Cajun and Creole cooking: dark-roux gumbos, rich jambalaya, simmered étouffée, and desserts like flambéed bananas Foster or classic bread pudding. The real lesson here isn't complicated technique, but mastering the exact color threshold of a flour-and-fat roux before it scorches, and understanding how the holy trinity of celery, onions, and bell peppers forms the backbone of the region's pot-cooked dishes.
Once the stirring and simmering wrap up, everyone sits down together to eat the full dinner they constructed from scratch. You leave the warehouse carrying recipe cards and an official apron, armed with the exact mechanics needed to replicate a proper Louisiana pot back in your own kitchen.
What it's like
You'll head into the St. Louis Street warehouse and get assigned to one of five dual-cooktop stations. With classes strictly capped at 10 adults, there's no room to stand back and watch; you will be chopping, measuring, and adjusting flame settings side-by-side with your station partner. The room gets warm from five hot stoves going at once, and the instructors keep the energy high with rapid-fire stories while checking your seasoning. Don't eat beforehand—you sit down to consume the full three-course meal you just cooked.
The move: Stand side by side at one cooktop building a pot of gumbo and jambalaya from scratch with a chef, then sit down and eat the dinner you cooked together.
