The story
You don't expect to walk into a subterranean tunnel carved straight into a high-desert hillside just to sit down with a wine glass, but Colorado's largest estate winery did exactly that. What it's like
Drive down past the estate vineyards to 3548 E 1/2 Road and step straight out of the Palisade sun into a cold subterranean draft heavy with oak and aging grape skin. The seated tasting happens right beside rows of stacked barrels in quiet darkness while daylight glows at the cave entrance. Keep in mind that the cave experience is strictly separate from the main walk-in tasting room—you need to reserve your seat in advance through Tock, or you'll end up at the standard counter outside.
