Entry No. 50 — the Boulder file — filed under: hands-on
Piece, Love & Chocolate
A Pearl Street chocolate shop and dessert kitchen that runs hands-on classes most weekends. Sessions include hand-rolling truffles, demystifying macarons, and making flourless pastries and molten lava cakes, and class students get 15% off in-store purchases that day. Private classes for small groups are also available.
The story
At 805 Pearl Street on the western end of Downtown Boulder, Piece, Love & Chocolate doesn't just sell finished truffles over a glass counter—they let you inside the working dessert kitchen to get your hands dirty. Most weekends, the boutique flips into an active teaching laboratory where you learn the actual mechanics of working with cacao.
The workshops bypass generic candy-dipping in favor of real technique. Depending on the date, you'll find yourself demystifying temperamental French macarons, hand-rolling dark chocolate truffles, or executing molten lava cakes and flourless pastries. You leave knowing how emulsion, temperature control, and ganache structure actually work under kitchen conditions.
What it's like
Show up ready to wear an apron and get coated in cocoa dust. Weekend public sessions are tightly capped and tend to sell out well in advance, so walking in off Pearl Street expecting a spot won't work. Once inside, expect a focused, hands-on session where you make your own batch from scratch, walk out with a boxed haul, and get a 15% student discount on retail purchases valid for the rest of that day.
The move: Take a weekend truffle or macaron class and hand-roll a box of chocolates together, then raid the shop with your student discount.
