Honey House Distillery at Honeyville
A family homestead north of town that bottles local honey and distills spirits from it next door. You can peer into a glass beehive to spot the queen, watch honey being bottled, and work your way along tasting counters of honey wines and award-winning spirits like honey bourbon, botanical gin, and a vodka distilled from honey wine. It is part working farm, part tasting room, all built around bees.
The story
Ten miles north of downtown Durango on Highway 550, the Animas Valley flattens out into an unexpected agricultural strip. Honeyville spent decades operating as a straightforward family homestead, packing wildflower honey, whipped spreads, and fruit jams. But Kevin Culhane eventually pushed the operation past sweet preserves and built Honey House Distillery directly alongside the honey bottling line.
Distilling honey is tricky, expensive business compared to running standard grain mash. Honey House starts with a base of raw Honeyville honey and honey wine (mead), running it through stills to yield a distinct lineup of spirits: a clear vodka distilled directly out of honey wine, a botanical gin, honey bourbon, and a straight bourbon whiskey cut with local wildflower honey.
The space sits squarely at the intersection of a working processing facility and an offbeat tasting room. While workers bottle jars of honey on one side of the floor, you can step up to the tasting counter on the other to work through high-proof spirits and mead flights. It is an operation completely built around the hive, right down to the live colony buzzing behind glass inside the shop.
What it's like
Pull off Highway 550 into the parking lot and head past shelves of fruit jams and jars of whipped honey. You'll usually spot the indoor glass observation hive near the store floor—take a moment to search the glass pane for the marked queen bee before heading to the tasting counters. There, you can sample flights of honey wines, botanical gin, and honey bourbon while watching the processing machinery at work. Call ahead (970-247-1474) to check current tasting counter hours, and sample a spoonful of raw wildflower honey before your liquor flight so you can trace the exact floral notes into the glass.
